Sliced Steak with Caper Sauce and Broiled Tomatoes with Bacon Bit Breadcrumbs

Serves 4

Ingredients

  • 1/2 bunch cilantro, chopped
  • 1/4 cup capers , drained
  • 2 TBSP Worcestershire
  • 2 TBSP white wine vinegar
  • 1 large shallot, coarsely chopped
  • 2 cloves garlic, minced
  • 2 anchovy flats, chopped
  • 1⁄3 cup olive oil
  • 4 large tomatoes, halved
  • 1/4 lb bacon, chopped
  • 1 cup panko breadcrumbs
  • 1 bunch chives , chopped
  • 2 lbs Flat -Iron Steak

Directions

  1. Preheat the broiler to high with a rack in the middle of the oven.
  2. Preheat a grill or grill pan to medium -high heat.
  3. In a food processor or blender combine the cilantro , capers , worcestershire , vinegar , shallot , garlic , anchovies , olive oil , and a punch of pepper . Process into a thick sauce.
  4. Place the tomatoes on a on a baking sheet. Drizzle the tomatoes with olive oil and season with salt and pepper . Broil until well charred at the edges, about 15 minutes .
  5. Meanwhile, heat a swirl of olive oil in a small skillet over medium -high heat; add the bacon and cook until almost brown and crisp, about 4 minutes. Add the panko and cook to brown, about 3 minutes; turn off the heat and comb ine the bacon and panko with the chives .
  6. Meanwhile, c oat the steak lightly with a drizzle of oil and season with salt and pepper . Cook steak over medium -high heat to desired temperature, about 10 minutes for medium rare. Transfer to a cutting board and let rest for 5 minutes.
  7. Thinly slice the steak against the grain .
  8. Serve with several slices of steak toped with the caper sauce and the tomato halves topped with the breadcrumb bacon mixture.

Notes

  • Panko breadcrumbs are a must for this recipe because they are larger than the standard breadcrumbs in the store.
