Serves 2 – 3
Ingredients
- 1/4 lb rice noodles
- 1/2 lb shrimp, peeled &
- deveined
- 4 scallions, chopped
- 2 garlic cloves, minced
- 2 egg whites, beaten
- 2 TBSP fish sauce
- 2 TBSP sugar
- 1 TBSP chili sauce
- 1 TBSP soy sauce
- 2 cups bean sprouts
- 3 TBSP dry roasted peanuts ,
- chopped
- 2 TBSP cilantro, chopped
Directions
- Place noodles in a large bowl and fill with enough hot water to cover noodles. Let stand until noodles become soft about 10 minutes and then drain and cool noodles in bowl of cold water and then drain again and set aside.
- Heat a large skillet over medium -high heat. Ad d some oil and cook the shrimp , approx 3 minutes. Add scallions and garlic , cook for a minute. Add the egg whites and stir, cook until they set, another minute. Add the fish sauce , sugar , chili sauce , and soy sauce . Cook until sugar dissolves approx 1 minu te. Add the noodles and bean sprouts and toss. Cook until heated through, approx 2 to 3 minutes.
- Serve pasta topped with peanuts and cilantro .
Notes
- Shrimp can be replaced with chicken or tofu
