Pepper -Grilled Steak with Chopped Summer Salad

Serves 4

Ingredients

  • 2 large garlic cloves, pressed
  • 1 ¾ tsp ground black pepper
  • 1 ¼ tsp salt
  • 2 lb top sirloin steak , about 1 ½” thick
  • 1 cup tomatoes , diced
  • 1 cup baby arugula
  • 1/2 cup red onion , diced
  • 1/2 cup feta cheese , crumb led
  • 3 TBSP Kalamata olives , pitted, chopped
  • 1 ½ TBSP olive oil
  • 1 jalapeño chili, seeded, finely chopped

Directions

  1. Mix garlic , pepper , and salt in small bowl; rub all over steak.
  2. Let stand at room temperature for about an hour.
  3. Spray barbecue grill with nonstick spray. Prepare barbecue (medium -high heat). Grill steak until charred and cooked to desired doneness, about 7 minutes per side for medium -rare.
  4. Let rest 10 minutes.
  5. Meanwhile, in a medium bowl, mix together the tomatoes , arugula , onion , feta, olives , oil, and jalapeno . Season to taste with salt and pepper.
  6. Thinly slice steak across the grain; arrange on plates. Spoon salad over steak and serve .
