Ingredients
- 1 lb spaghetti
- 4 anchovy fillets, chopped, plus 1
- tablespoon oil from can
- 1 lb sausage, preferably chorizo
- or hot, cut into thin slices
- 3 garlic cloves, finely chopped
- 1 28oz can crushed tomatoes
- 1 cup green olives, pitted, halved
- 1/4 cup capers , drained
- 1 TBSP smoked paprika
- 2 tsp oregano , dried
Directions
- Cook pasta in boiling salted water until al dente, about 7 minutes . Drain .
- Meanwhile h eat oil from anchovy fillets in large skillet over medium -high heat. Add sausage and cook until beginning to brown, stirring sausage often, about 4 minutes. Add anchovy fillets and garlic ; stir 1 minute. Add tomatoes , olives , capers , smoked paprika , and oregano . Simmer tomato sauce 5 minutes to blend flavors. Season to taste with salt and pepper.
- To serve, divide pasta among plates and top with sauce.
