Pasta Puttanesca

Serves 3-4

Ingredients

  • 1 lb spaghetti
  • 4 anchovy fillets, chopped, plus 1 tablespoon oil from can
  • 1 lb sausage, preferably chorizo or hot, cut into thin slices
  • 3 garlic cloves, finely chopped
  • 1 28oz can crushed tomatoes
  • 1 cup green olives, pitted, halved
  • 1/4 cup capers , drained
  • 1 TBSP smoked paprika
  • 2 tsp oregano , dried

Directions

  1. Cook pasta in boiling salted water until al dente, about 7 minutes . Drain .
  2. Meanwhile h eat oil from anchovy fillets in large skillet over medium -high heat. Add sausage and cook until beginning to brown, stirring sausage often, about 4 minutes. Add anchovy fillets and garlic ; stir 1 minute. Add tomatoes , olives , capers , smoked paprika , and oregano . Simmer tomato sauce 5 minutes to blend flavors. Season to taste with salt and pepper.
  3. To serve, divide pasta among plates and top with sauce.
