Serves 4 – 6
Ingredients
- 1 can (15 oz) garbanzo beans
- (chickpeas), drained & rinsed
- 1/2 cup Kalamata o lives
- 1 TBSP o live juice brine from
- Kalamata olives
- 2 TBSP lemon juice
- 2 TBSP olive oil , plus extra
- 2 garlic cloves , peeled
- 2 tsp cumin
- 1 tsp smoked paprika , plus extra
Directions
- Set aside several garbanzo beans and olives as a garnish .
- Combine remaining garbanzo beans , olives , olive juice , lemon juice , olive oil , garlic , cumin , and paprika in a blender and process until smooth or desired consistency.
- Transfer to a small serving bowl sprinkle with the extra smoked paprika , a drizzle of olive oil , and the garbanzo beans and olives you set aside.
- Serve with pita chips or corn tortillas.
Notes
- There are many different versions of hummus. To experiment with your own replace the olives and olive juice brine with your own ingredients, or replace them with nothing to have plain hummus
