Ingredients
- 1 lb fresh pizza dough,
- homemade or bought
- Parmesan Cheese, grated
- Arugula or other bitter greens
- 2 sausages, fully cooked, sliced
- 6 dried figs or dates, sliced
- 1/2 red onion , sliced , rings
- separated
- 1 cup goat cheese, crumbled
Directions
- Prepare barbecue (medium -high heat).
- Halve dough ; roll two 10-inch rounds on floured work surface .
- Irregular shapes are fine.
- In a small bowl mix a ¼ cup olive oil with a punch of salt and pepper .
- Brush one side of each pizza dough with oil mixture.
- Grill pizzas, oiled side down, until golden on bottom, about 4 minutes. Turn pizzas over. Brush again with oil mixture and then sprinkle with parmesan , arugula , sausages , figs, onions , and goat cheese . Grill until pizza is crispy and cheese starts to melt , about 4 minutes.
