Grilled Sausage and Fig Pizza

Ingredients

  • 1 lb fresh pizza dough, homemade or bought
  • Parmesan Cheese, grated
  • Arugula or other bitter greens
  • 2 sausages, fully cooked, sliced
  • 6 dried figs or dates, sliced
  • 1/2 red onion , sliced , rings separated
  • 1 cup goat cheese, crumbled

Directions

  1. Prepare barbecue (medium -high heat).
  2. Halve dough ; roll two 10-inch rounds on floured work surface, irregular shapes are fine.
  3. In a small bowl mix a ¼ cup olive oil with a punch of salt and pepper .
  4. Brush one side of each pizza dough with oil mixture.
  5. Grill pizzas, oiled side down, until golden on bottom, about 4 minutes. Turn pizzas over. Brush again with oil mixture and then sprinkle with parmesan , arugula , sausages , figs, onions , and goat cheese . Grill until pizza is crispy and cheese starts to melt , about 4 minutes.
