Ingredients
Asparagus
- 1 lb fresh asparagus, trimmed
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Caesar Dressing
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- 2 tbsp grated Parmesan cheese
- Salt and pepper, to taste
For Serving
- Additional shaved or grated Parmesan
- Lemon wedges
Instructions
1. Prep the Asparagus
- Preheat grill to medium-high heat.
- Toss asparagus with olive oil, salt, and pepper until evenly coated.
2. Grill
- Place asparagus directly on the grill grates.
- Grill for 6–10 minutes, turning occasionally, until tender and lightly charred.
3. Make the Caesar Dressing
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, Worcestershire sauce, garlic, and Parmesan.
- Season with salt and pepper to taste.
4. Toss and Serve
- Transfer grilled asparagus to a serving platter.
- Drizzle with Caesar dressing and toss lightly.
- Top with extra Parmesan and serve with lemon wedges.
Notes
- For extra flavor, add anchovy paste (½ tsp) to the dressing.
- Use a grill basket if your asparagus spears are thin.
- Best served immediately while warm and slightly crisp.
