Blackened Shrimp Po'Boy

Serves 4

Ingredients

  • 1 lb shrimp, raw, medium, thawed, peeled and deveined
  • 2 tsp old bay
  • 3 TBSP mayonnaise
  • 1 TBSP Dijon mustard
  • 1 loaf French bread, cut into 4 sections, each half split and excess bread dug out
  • 1/2 head romaine lettuce, shredded
  • 1 yellow or red bell pepper, sliced
  • 2 small tomatoes, sliced
  • 2 scallions sliced

Directions

  1. Preheat a grill or grill pan to medium -high.
  2. In a small bowl, combine the shrimp , old bay , and a swirl of olive oil . Toss to coat the shrimp.
  3. In another small bowl, combine the mayonnaise , mustard and 1 ½ teaspoons water , stirring until smooth.
  4. Cook the shrimp on the grill or grill pan, until cooked through, about 2 minutes per side .
  5. Lay the bread open on plates. Layer with the lettuce , bell pepper , tomatoes and scallions .
  6. Arrange the shrimp on top of the vegetables and drizzle with the mayo -mustard sauce.

Notes

  • Old bay seasoning in this recipe can be replaced with a combination of chili powder, garlic powder, salt and pepper. If you would like more of a grilled flavor use smoked paprika instead of old bay and add a pinch of salt. A lot of store bought shrimp is already deveined, check with your store or the package to find out.
