Ingredients
- Pizza Dough
- 1/2 lb chicken breast(s), cubed
- 1/2 cup barbecue sauce , divided
- 1 1/2 cups shredded Mexican cheese , divided
- 7 1/2 oz canned black beans, rinsed and drained (about 1/2 a 15 oz can)
- 1 small red onion, finely chopped
- 1 TBSP cilantro, chopped
Directions
- Preheat oven to 450° .
- Heat a medium skillet over medium -high heat. Spray with cooking spray and cook the chicken until cooked through, about 10 minutes. Transfer cooked chicken to medium -size bowl and toss with half of the barbecue sauce .
- Meanwhile, dust a pizza stone or pizza cooking pan with cornmeal or flour. Roll out the pizza dough into a large circle.
- Roll the edges inward to create a ridge around the p izza. Place the pizza dough on the pizza stone.
- Evenly s prinkle the pizza with half of the cheese . Then a rrange the chicken and black beans over the cheese. Next, top, with the onion and cilantro . Drizzl e with remaining barbecue sauce and sprinkle with remaining cheese.
- Bake until crust is golden brown and cheese is melted, about 10 minutes .
- Slice and serve.
Notes
- If you want to make your own dough, follow the recipe under vegetable calzones and allow 2 to 24 hours for the dough to rise.
